1. Read the label first
Before any test, flip the jar. Pure honey should list one ingredient: honey. Walk away from anything that mentions high-fructose corn syrup, glucose syrup, "honey blend," or added flavorings. Country of origin matters too — single-source, traceable honey is far less likely to be cut.
2. The water test
Stir one tablespoon of honey into a glass of water. Pure honey is dense and won't dissolve easily — it sinks and clumps at the bottom. Fake or syrup-based honey dissolves quickly and clouds the water.
3. The crystallization clue
Real, raw honey crystallizes over time — that grainy, opaque texture in old jars is a good sign. Fake honey usually stays perfectly clear and runny for years because the added syrups don't crystallize the way natural glucose does.
4. The vinegar test
Mix a spoonful of honey with water and a few drops of vinegar. If it foams up, that's a red flag — it suggests the honey has been bulked out with plaster or chalk-based fillers.
5. The iodine test
Stir honey into water and add a few drops of iodine. If the mixture turns blue, the honey likely contains corn starch — a common cheap thickener used to mimic the body of real honey.
